Trailside Burgers
These burgers are made with sweet potato and black beans and they're delicious. We have used them for fuel in long races, or just to enjoy with friends. They go down easy and freeze great for lunches, if there's any left. We hope you like them as much as we do.

4 Sweet Potatos

2 Tablespoons of diced onions (we like red, but knock yourself out with your favourite)

1 Can of Black beans (organic is great, no salt added is great)

1 cup Almond Meal

1 Cup of ground oats (we usually put the whole almonds in the high speed blender with the oats and blend them up together, they give the burgers taste and help bind the burgers together. If you don’t have a high speed blender or a food processor you can put the oats in whole)

1 Teaspoon of smoked paprika

1 Teaspoon of garlic powder (if you have time and garlic use real garlic)

1 Teaspoon of onion powder (you can leave this one out if you don’t love onions)

1 Tablespoon of agave or maple syrup

1/4 Teaspoon of good quality salt (sea / himalayan)

1/4 Teaspoon of black pepper

1 cup of cooked brown rice or quinoa

1 Squirt of ketchup (we don’t usually have this ingredient but if we are making this at someones house who has it, give it a squirt)

1 Tablespoon Coconut oil

Preheat the oven to 400 Degrees F

Slice the Sweet potatoes length wise, spread coconut oil on the cut faces and place them face up on a baking tray, bake for 40-45 minutes until they are soft

Cook he brown rice or quinoa according to its instructions and set aside to cool

Dice the onion, set it aside

Drain, rinse and dry the can of black beans, place half in a large mixing bowl, using a potato masher, mash them into a paste. set the other half of the can aside

Once the sweet potato is cooked, how it too cool. Remove the skins (if you don’t mind them in your burgers leave them in, its extra nutrients) place them in the mixing bowl and mash them up.

On two baking sheets, cover them with parchment paper

Add in all other ingredients to the mixing bowl and combine with your hands. Form paddies of your desired size and place on the parchment paper covered baking trays. (When your done you can eat the remaining mixture off your hands and get a taste for how good these burgers are going to be)

bake the burgers at 400 degrees F for 20 minutes and then flip one to see if it’s started to brown a little. Be careful as the burgers are quite delicate when hot. If it looks good, give it a flip and cook for another 20 minutes.

Remove them from the oven and allow them to cool a little, as they cool they become more firm.

Enjoy them however you like. Put them on a burger bun with your favourite accompaniments, wrap them in lettuce, cut them up and add them to a salad. They are delicious, filling and nutritious however you choose to enjoy them.
